The Bar am Wasser offers seating for 66 indoors and 48 outdoors. It is located near the “Bürkliplatz” market and benefits from its proximity to Zurich farmers, ensuring access to fresh and regional products. The opening hours are from Monday to Saturday, from 4pm to 0:30am, with variations during the summer to accommodate terrace seating.


With the vision of being the first bar to be awarded a Michelin star, the Bar am Wasser was opened at the end of October 2018. The concept, devised by Dirk Hany, was implemented by him, successfully placing him as co-owner and managing director along with his strong team of 10. The bar by the water aims to uphold high-level bar culture and focuses on delivering an unforgettable experience for each guest.


After 4pm, the bar transitions into a “bar gourmet temple” with a “fine drinking” concept. Each evening, guests are personally escorted to their tables and served an “amuse cocktail” as a starter, which might be bitter, salty, or sour, intended to prepare the palate for the next drink. The modern Art Deco design of the bar includes comfortable armchairs and stools, making it an ideal place to linger. The shaker wall with over 100 shakers from around the world enhances the cosmopolitan atmosphere.

Regionality and sustainability are key; cheese, vegetables, and fruits are sourced locally, and all juices are freshly squeezed daily. The popular tartare is made from Angus hip from “Holzen Fleisch” in “Ennetbürgen”. Seasonal products are preferred, ensuring that ingredients like strawberries or mangoes are only used when in season. Drink decorations are made with fruit peels, and metal straws and glass stirrers replace plastic ones to minimize environmental impact.
